The Philosophy of Greekfest Cuisine

Greekfest cuisine ultimately draws from the lessons of the Mediterranean Diet, which is the hallmark of the Hellenic culinary tradition. 

 

The Mediterranean Diet is premised around the balanced consumption of a variety of plant foods (whole grains, fruits, vegetables), olive oil, cheeses/yogurts, seafood, and red meat.  Each, when consumed in the appropriate quantity, contributes to the body's overall health and nourishment.  The use of olive oil, for example, is a monosaturated fatty acid (as opposed to saturated fats which raise cholestrol levels) that contains important antioxidants for the body.  The relatively frequent consumption of fish supports high protein levels and confers important "omega-3 fatty acids." 

 

At Greekfest, we believe in providing meals that synthesize the entire Mediterranean Diet pyramid, as well as meals that focus on individual aspects of it.  "Mezethes" (appetizers) such as Homous and Melintzanosalata are rich in vegetables; Tzatziki is a yogurt dominated appetizer; dishes such as the Phyllopites or the Antipasto dip into each level of the food pyramid.  Equally so, our lunches and entrees sample the entire pyramid.  Our specialty in freshly-prepared seafood follows from it being among the most heavily consumed meal throughout Greece, owing largely to its importance in the Mediterranean Diet.  Our meat dishes are made with balanced ingredients, thereby completing the pyramid and guaranteeing a superb taste of Greece.
